  3. Pack ground beef into a rectangular patty, sprinkle with remaining salt and pepper, and cook in pan. Cook until internal temperature is 155°F.
  4. Combine butter, potatoes, and red and green peppers in frying pan. Sautée until peppers and potato soften.
  5. Add 3 eggs to pan with potato mix. Stir until scrambled and fully cooked.
  6. Plate tortilla, then sauce, cheese, beef, and egg mix. Wrap with both ends closed.

Heat a large skillet over medium heat and stir in the sausage and garlic. Continue cooking and stirring until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Spray same skillet with cooking spray. Add water, salsa, beans and taco seasoning mix.
