  4. Peel and dice the Jicama and place in a medium bowl.

  6. Rinse and dice the cilantro; add a handful to the mango and Jicama.

  9. Finely dice the Fresno peppers and discard the ribs and seeds. Add to the bowl.

  13. Remove the chicken and let rest 10 minutes.
  14. Meanwhile, layout the tortillas.

  19. Add sour cream to the burrito and roll to close.
  20. Add burrito to the grill for about 2 minutes per side and serve hot.

Hand grating takes a little longer, but it's totally doable and I've. Shred jicama on the large holes of a box grater. Working with one handful at a time, squeeze jicama firmly to remove excess liquid; discard liquid and transfer jicama to a large bowl. Add sour cream, green onions, corn, beans, parsley, vinegar, cayenne and salt and fold together to combine. Set aside while grilling the sausages.
