Steps to make Cinnamon Roll Pancakes:
For the pancakes: Mix dry ingredients (first 4) in one bowl and wet ingredients (next 4) in a separate bowl.
Slowly whisk the wet ingredients into the dry ingredients until moistened, leaving a few lumps. Set aside.
For cinnamon filling: Mix all ingredients together. (brown sugar, cinnamon, 1/4 cup butter)
Place in piping bag or Ziploc bag and snip the corner. Set aside.
For the glaze: In a microwave safe bowl, melt butter and cream cheese. Stir together. Add vanilla.
Whisk in powdered sugar and vanilla. (You can add milk if necessary to create a glaze consistency.)
To make it all come together. Heat griddle to 325.
Make desired size pancake on griddle.
Using the piping bag, create a cinnamon swirl starting at the center of the pancake.
When the pancake has a lot of little bubbles, flip and cook for a few minutes on that side.
Remove from griddle and glaze with cream cheese icing. Serve immediately.
Notes: This can be made with box mix pancakes. I have used the box when I was in a hurry and they turned out fine. The cinnamon/sugar mix will create small craters in the pancakes…which are perfect to hold the glaze! Also, if you have any of the sugar/cinnamon mix leftover, it keeps well in the fridge so you can use it again the next time your pancakes need a kick! Enjoy!
